Yeison Tovar grows this coffee on his Las Brisas farm in Huila, Colombia, a property built up over years of hard work. The name comes from the cool winds that pass through the land, and the farm supports his family along with two permanent and four seasonal workers. After learning about Pink Bourbon from neighbors, a variety known for good yield and cup quality, he began growing it and improving the farm's drying setup as prices got better.

The cherries are picked by hand, kept in bags for four days, then depulped and left to rest for another 20 hours before washing. This fermentation step is meant to bring out more of the coffee's natural qualities. The coffee is then sun dried for 15 to 20 days. The result is a clean, high quality cup shaped by the region's climate and the care put into growing it.
