Oscar and Francisca Chacón are third-generation producers at Las Lajas in Costa Rica, and this Perla Negra lot shows just how far their curiosity has taken them. The couple joined the country's early micromill movement in 2005, buying their own depulper to gain more control over quality. What started as experimentation grew into real innovation, especially after a 2008 earthquake knocked out their water and power and pushed Francisca to build raised beds inspired by African drying techniques. That resourcefulness eventually became Las Lajas's calling card.

Perla Negra is a natural process built for patience. Ripe cherries with high sugar content spend a week on raised beds in a thin layer, soaking up the sun, then rest in the shade before finishing on the greenhouse patio, where they're turned twice a day. The result is one of the slowest drying processes the farm produces, taking up to a month to complete. That extended timeline gives the coffee space to develop deep, layered sweetness in the cup.
