Alexander Vargas, a dedicated coffee producer from Los Olivos village in Palestina, has perfected his craft over 20 years, specializing in high-quality specialty coffees that have earned him four national Cup of Excellence finalist positions. This particular lot showcases his meticulous attention to detail, featuring beans that undergo a 36-hour anaerobic fermentation, followed by washing and a careful 15-day drying period on raised beds at his La Piragua Coffee farm, where Alexander continually innovates with both washed and natural processing methods.
