This single-variety lot comes from a producer in the north of El Salvador, a country long associated with excellent Pacamara. The coffee is honey processed, meaning it’s dried with some of the mucilage from the coffee cherry still attached. The resulting cup is sweet and lush, with a velvety texture balanced by an acidity reminiscent of the piquant-yet-sweet branch of the citrus family: tangerine, Meyer lemon, key lime. A lingering shortbread or sugar cookie finish, with a hint of allspice or nutmeg, rounds out the cup. A perfect coffee for fall.
